L'orange loin it is a refined second course, perfect to serve for special lunches and therefore to bring to the table even today for Sunday lunch. In this recipe I have combined two types of cooking, first in a pan to seal the meat juices well and create a nice crust, and then in a ventilated oven for homogeneous cooking.
The flavor and scent of orange combines very well with the pork loin , pay attention only to cooking as this type of meat is very lean and if you are not careful you risk having a dry roast and it would be a real shame: P
How to make the pork loin with orange
Grate the peel of the oranges and recover the juice as well.
Put the meat in a baking dish and add the rosemary, salt, pepper, peel and orange juice and leave to marinate for an hour.
In a saucepan, melt the butter in the oil.
Then add the meat, keeping the marinade aside, and brown it on all sides. Then blend it with the wine.
Transfer the pork loin back to the pan with the marinade and bake in the oven at 180 ° C for 1 hour.
Halfway through cooking, remember to turn the meat over.
When cooked, instead, put the bottom in a saucepan and let it thicken.
